No Bake Energy Balls

I cannot count the amount of times I have made these. They are so delicious and so easily made. I am asked by anyone who has ever tried one to share the recipe. I have seen many variations of these on Pinterest as well. They are super healthy, super easy and unbelievably delicious. They taste like a no bake cookie and who doesn’t love cookies?

No Bake Energy Balls

Ingredients:

1 cup- semi-sweet chocolate chips

1 1/3 cups- toasted shredded coconut

2 teaspoons- vanilla extract

1 cup- peanut butter or almond butter

 2 cups – old fashioned oats

2/3 cups- agave nectar or honey

1 cup- freshly ground flax seed

2 teaspoons- cinnamon

Add all ingredients into a large mixing bowl

Stir together until combined, no need to get fancy you can also get in there with your hands if you have little ones

Once all combined cover with clingwrap and put into the fridge for 20-30 mins. This allows for the mixture to set up and it is easier to roll into balls.

I like shaping mine into 1-inch balls using an ice cream scooper. I have also previously used measuring cups and spoons.  If you prefer bars over balls then press the mixture into a baking dish lined with parchment paper, and you can make energy bars instead.

Store in an airtight container and keep refrigerated for up to 1 week.

There are tons of variations you can make with these. You can add slivered almonds and dried cranberries for a breakfast ball or bar. Different types of nut butter can really change up the taste and be delicious.
