Tis’ the season for shopping, baking, cooking, and more. One thing the season brings, is the gift of giving, and with this spirit, I decided for a change to switch things up on my Momma. When I started adulting officially and bought a home with my husband, we did not drift far. We are both just a few miles from our parent’s homes. This makes me a very lucky girl, because my Momma LOVES to cook. Not to mention she has no idea how to cook for anyone other than an army. I am always reaping the benefits of this and getting a dish or two from her throughout the week. 

My mom is the originator of our family shepherd’s pie recipe. My mom is always nice enough to accommodate me and change it up a bit since I don’t eat red meat. I decided to create a pie of my own, with my own little twists and share a dish with her. The prep time is 10 minutes and the cook time is 40, you’ve got dinner ready to serve in under an hour. This busy mom loves anything quick and delicious. 

Check out my vegetarian twist to my Momma’s shepherd’s pie, I promise you won’t be disappointed. I use all premade ingredients to ensure this is quick and simple to make and to clean up! Plus, I am sharing an easy clean up trick, unlike my Momma, I am not the dishes diva. 

Ingredients:

24 oz ready to heat & serve mashed potatoes (I grabbed the sour cream & chive mashed potatoes)

1 lb. bag of steamed ready to eat lentils

1- 10 oz bag frozen mixed veggies: peas, carrots, green beans and corn

1- 13 oz bag of a Meatless Soy Protein

9 oz ready to serve polenta

1/2 stick butter

Seasonings of your choice (thyme, parsley, S & P)

Vegetarian Shepherd's Pie

Directions:

Preheat your oven to 400 degrees

Mix the soy protein and lentils in a large bowl till combined

Add a layer of the lentil & protein mixture to the bottom of your dishes

Layer your veggies mix over the protein & lentils

Thinly slice your polenta and layer it over the veggies

Add slices of butter and seasonings over the polenta

Add your potato layer over the polenta

Add additional butter slices and any seasonings you wish, I used paprika, thyme, S & P

Bake in the oven for 40 mins

SERVE!
