Healthy Holiday Side Dishes

As someone who once went completely vegetarian this is a big win! Back in the day, I went cold turkey vegetarian- get it, cold turkey. Anyways, I ended up having difficulty because I ate too much starch as substitute. This was over 10 years ago and it wasn’t as socially fad back then. Circa 2017 and I am happily incorporating better, healthier and tastier options into my diet. This is where Alexia comes in with their curations and deliciousness.

Alex started by hand selecting the finest ingredients and producing only small batches at first making Alexia a hard to find favorite. Alex always used real ingredients and put quality and taste first.

The Mashed Cauliflower with Butter & Sea Salt is perfect on its own as a mashed potato alternative or easily incorporated in a Shepard’s Pie main dish.

Vegetarian Shepherds Pie

Ingredients:

1 package of Alexia Mashed Cauliflower with Butter & Sea Salt

1 lb. bag of steamed ready to eat lentils

1- 10 oz bag frozen mixed veggies: peas, carrots, green beans and corn

1- 13 oz bag of a Meatless Soy Protein

9 oz ready to serve polenta

1/2 stick butter

Seasonings of your choice (thyme, parsley, S & P)

Directions:

Preheat your oven to 400 degrees

Mix the soy protein and lentils in a large bowl till combined

Add a layer of the lentil & protein mixture to the bottom of your dishes

Layer your veggies mix over the protein & lentils

Thinly slice your polenta and layer it over the veggies

Add slices of butter and seasonings over the polenta

Add a Mashed Cauliflower with Butter & Sea Salt layer over the polenta

Add additional butter slices and any seasonings you wish, I used paprika, thyme, S & P

Bake in the oven for 40 mins

SERVE!
