Sunday Funday is meant for Sunday meals with my family. When Sunday rolls around and I do not have the opportunity to shop, I whip up the best I can with what is in my pantry.
Meaningful moments in my life are moments when I get to sit for a meal with my family. Unfortunately, I often suffer from bad headaches and this can at times keep me from treasuring these moments. When a bad headache hits I reach for my Excedrin® Extra Strength and this allow me to save the day. A meal this Sunday that I put together can be transitioned in many different ways, all depending on what is in your pantry. My staples to change around and make any meal work are pasta, sauce, veggie and protein. However, a veggie in the pantry is hard to find, so I do always have my daughter’s favorite stocked in the freezer…broccoli! Yes, my 2 year old LOVES broccoli. I did something right with this whole parenting thing. So back to the recipe. This week I happen to have:
Organic Whole Wheat Spaghetti
Can of Shredded Chicken
Cheesy Broccoli Chicken Sauce
Bag of Organic Frozen Broccoli (out of my freezer)
Directions: Boil the pasta as directed. While that is cooking, season up that shredded chicken (I used paprika, garlic & onion powder, S & P). Next up spray your casserole dish and add all the fixings. Toss all together until combined well. I had some panko breadcrumbs in the pantry so I added this on the top for texture and crunch. Toddler requested and approved. Cover and place into the oven at 350F for 20 mins. Everything is cooked, however you need to warm the dish through. After 20 mins let’s get crazy on this Sunday Funday and take our tops off! Just kidding… just the top cover of the dish! Calm down this isn’t spring break! Take the top cover off and bake for an additional 10 mins to brown the crumbs on top if you’ve chosen to add them. Serve!
This dish is best with a penne pasta or my daughter’s favorite macaroni, or bow tie, but use what you’ve got and it will still be delicious, I promise!
